Bakeries
A bakery is a business where the production of breads, cakes, doughnuts, crullers, pies, cookies, crackers, spaghetti, macaroni, or similar foods are either wholly or in part of flour or meal, including all frozen or canned baked goods, are produced. This includes all restaurants, hotels, private institutions, home bakeries, establishments operating doughnut-frying equipment and other similar places offering their products for sale. To operate a bakery, you will need a license from the Connecticut State Department of Consumer Protection (DCP). This Department’s food division inspects and regulates bakeries. In addition to the standard procedure for applying as a food- service or restaurant establishment with the State of Connecticut and with the City of New Haven, you must also declare as a bakery and fill out the bakery license application within this section.

- 1-4 workers: $20
- 5-9 workers: $40
- 10-25 workers: $100
